Guilt Free Blue Cheese Kefir Dressing
And what kind of dressing would you like?
The moment of truth… salad guilt. You have done the right thing and ordered a salad as a side instead of something delicious like fries and then they want to know what kind of dressing. That little chubby person inside is yelling with all of her might – Get the blue cheese!
As a lover of blue cheese dressing, the above scenario happens more frequently then you might think. I am also married to a man who would dip almost anything in blue cheese dressing if given the chance. Have you ever read the label on this stuff? Forget the monstrous amount of calories and fat, it is full of preservatives. Cheese should not be able to sit out on a shelf at room temperature for months before opening.
So what do you do? Make it yourself and go one step further and make it with kefir!
The problem with kefir (not really a problem) is that once it really gets going, you have a lot of it. If I miss a day with the smoothy I have extra in the fridge looking for use. The other night I was looking for something different to dress my side salad. I am really into fruit in my salads lately and so had added some pear to the mix. Then it hit me: the pear needed blue cheese.
I had a lump of blue cheese in the fridge that my husband had picked up on sale and that was looking a little past its best. i whipped up this dressing which is actually little bit blue cheese and a little bit ranch and it was delicious!
Blue Cheese Kefir Dressing
A better take on blue cheese dressing
- 1cup kefir
- 2 inch lump of blue cheese (you can adjust this for taste
- 1/2tsp granulated garlic
- 1/4tsp white pepper
- 1 tsp dried dill
- 1/2 tsp dried thyme
- Crumble the blue cheese into jar. Add in the remaining ingredients and shake it like a Polaroid picture! Shake it!
- Let the dressing stand for up to 1 hour to allow the flavors to mingle and the garlic to come through.
- Shake again before use and dress your salad.
- This makes and amazing pizza crust dip if you are into that kind of thing.
