What’s up doc?
This might seem a little ridiculous but some times it is the little things that bring a smile to my face when the weather is wet and the days are long. To be fair, the same things tend to make me smile when the Spring rains come and in the heat of Summer when a fresh salad is in order. Once such thing is rainbow carrots.
There is something magical about this whimsical produce in that you can never be too sure what colour you will find when you cut into it. The purple ones are not always purple all the way through and just when you think that you have a simple orange carrot…wham! They are fun, exciting and fabulous for kids who tend to turn up their noses at the veggies on the table.
They are not always cheap, but carrots go a long ways and so save them for a time when you need a little ray of sunshine, find yourself a good market and go for it.
So what are you going to do with these rainbow wonders? You can use a peeler to peel long strips and add them to salad, chop them up and cook in a little butter until just tender, boil and lightly mash them for a technicolour mash or just chomp down Bugs Bunny style. I like to think that Bugs would have thoroughly enjoyed a good rainbow carrot given his sense of flare.
Carrots on the brain? As I am currently obsessed with this particular vegetable and simply cannot resist a kitchen gadget or a vintage ornament, I am loving these carrot themed accessories.
